Snickerdoodle Mini Muffins

Ini pertama kali gue nyoba resep mini muffin ini.
Ternyata eeuunak, anak2 doyan bgt... bapaknya juga!
Tadi pagi, dapur kita dipenuhi wangi cinnamon... so tempting.
Bikinnya cepet bgt, gampang deh. Again...special thanks to Mr. Quaker forthis easy, HEALHTY & delicious muffin recipe. Resep ini masuk kategori; less than 30 min (bikinnya), kids fave, low sodium juga lower fat. Gue tambahin bintang2...biar makin menggoda.

Topping
1/3 granulated sugar
1 tsp ground cinnamon
Muffin
1-1/2 cup all-purpose flour
1 cup oats (quick or old fashion, uncooked)
1/2 cup granulated sugar
1 tbsp baking powder
1 cup fat free milk
1 egg, lightly beaten
4 tbsp (1/2 stick) margarine/butter, melted
1 tsp vanilla.
  1. Heat oven to 400°F. Spray bottoms only of mini muffin pan cups with cooking spray.
  2. For topping, combine sugar and cinnamon in small bowl; mix well and set aside.
  3. For muffins, combine flour, oats, sugar and baking powder in large bowl; mix well. In small bowl, combine milk, egg, margarine and vanilla; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.)
  4. Fill muffin cups two-thirds full. Sprinkle topping evenly over tops of muffins.
  5. Bake 12 to 14 minutes or until light golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan. Serve warm.
3 Dozen.

To prepare regular-size muffins, line 12 medium muffin pan cups with paper baking cups or spray bottoms only with cooking spray. Prepare muffin batter as directed above. Fill muffin cups almost full. Sprinkle with topping. Bake 18 to 22 minutes or until light golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan. Serve warm.

Cocoa Banana Oatmeal MUFFIN

Bikin muffin itu termasuk uruan 'baking' yg paling simple, cepat, gampang tapi tetep uenak. Muffin salah satu pilihan sarapan yg cukup sering nongol di rumah kita. Kadang gue bikin malem u/ sarapan besoknya, atau pagi sekalian. Misalnya bangun jam 6 pagi aja, jam 7 muffin dah tersedia, hangat-wangi-lezat-sehat. Ada bbrp resep muffin andalan kita, ini salah satunya.
Gak spt cake yg telornya byk, belom lagi butter atou menteganya bejibun... kalo ini cuma 1 telor, 5 sdm butter plus oatmeal pula, jadi 12 muffin ukuran sedang. Special thanks to Quaker Oatmeal u/ resep2nya nan sehat.
Resep ini dikatergorikan: Kids fave, less than 30 minutes (bikinnya), low sodium, low fat.

1-1/4 cups terigu.
1 cup oatmeal (quick/old fashioned, uncooked)
1/2 cup gula
1/3 cup coklat bubuk (ayak dulu ya)
2 sdt baking powder
1/4 sdt baking soda
2/3 cup mashed ripe banana (3 pisang kecil, ancurin pake garpu)
1/2 cup susu cair (low fat deh)
5 sdm margarine/butter (lelehkan)
1 telor
1 sdt vanilla
1 kotak kecil kismis (gue tambahin sendiri)
  1. Panasin oven 180 C. Taruh paper cup di cetakan muffin atau kalo gak ada olesin cetakan muffinnya dgn margarine/butter tipis2. (12 muffin ukuran sedang)
  2. Dalam mangkuk besar, campur terigu, oats, gula, coklat bubuk, baking powder dan baking soda, aduk hingga rata.
  3. Dalam mangkuk sedang campurkan pisang, susu, margarine, telur dan vanilla, aduk rata. Kemudian campurkan dalam campuran terigu dkk hingga campuran tsb lembut. Jangan overmix, ntar texturenya jadi kayag cake!)
  4. Isi muffin cups hingga hampir penuh, taburin kismis diatasnya dan bakar 20-25 menit atau check pakai tusuk gigi, pastikan tusuk gigi yg di masukkin keluar dgn bersih (gak basah). Biarkan muffin dlm pan selama 5 menit baru keluarkan dan taruh di wire rack. yummy..yummy!!

    Note:
    -Kalo bikin muffin atau cake atau masak apa aja yg butuh mashed banana/potato, jangan blender pisang/kentangnya, ntar texturenya rusak trus bentuknya jadi kayag lem (gluey). Jadi ancurin pake belakang garpu aja atau ya pake masher potato.
    -U/ memudahkan naroh adonan ke cetakan muffin, supaya sama banyaknya (so matengnya barengan dan merata)... pake sendok scope ice cream, gampang dan rata pembagiannya.

Orak-arik

Ini salah satu jenis sayuran yg termasuk kategori' express cooking'.
Kalo di kulkas cuma ada bahan2 standard...yg udah orak-arik adalah best choice.

1 telur, kocok lepas
3 lembar kol, iris halus
1 wortel besar, iris halus memanjang/parus kasar.
25 gr suun, potong 10 cm, rendam sampai lunak, tiriskan
50 gr udang, cincang kasar
3 sdm minyak u/ numis
5 bh bawang merah, iris halus
3 bawang putih, cincang halus
1 sdt garam
1/2 sdt merica
Cara membuat:
  1. Tumis bawang putih & bawang merah sampai harum, masukkan wortel aduk sampai layu.
  2. Masukkan udang, kol, suun, garam dan merica..aduk sampai matang
  3. Tuang telur sambil aduk samai telur menggumpal kecil2 dan tercampur rata bersama sayur. Angkat dan hidangkan.

Perkedel Tahu-Telur

Ini resep yg gampang bgt bikinnya. (kapan sih gue bikin yg susah2,... gak mampu).
Kebetulan di tempat tinggal kita ini tahu yg dijual di pasar itu rada hambar...
nah pilihan bikin perkedel tahu ini ..is a very good idea!
Enak dimakan pake sambel kecap... Siap2 aja nambah nasi teruuus!

250 gr tahu kuning, haluskan (kalo gak ada tahu putih juga okey)
50 gr udang kupas, cincang kasar
1 butir telur
1 btg daun bawang
minyak goreng secukupnya.
Bumbu Halus
3 siung bawang putih
1/2 sdt merica
1 sdt garam
Cara membuat:
  1. Campur bumbu halus dan tahu halus.
  2. Tambahkan telur, daun bawang dan udang.
  3. Goreng tahu dalam minyak panas sedang hingga matang. Angkat dan sajikan selagi hangat.
** Jangan lupa abis ngegoreng, selalu tiriskan trus biarkan di atas kitchen towel dulu, biar minyaknya terserap di kitchen towel itu.

Coconut Swirl Brownies.

Ini salah satu brownies yg punya 'excellent taste', digemari seluruh keluarga kita, juga temen2 yg pernah maen ke rumah kita dan disuguhin brownies ini... rata2 sebelum balik mereka minta resep ini. Super lezat. Bikinnya lumayan gampang, sedikit makan wkt aja. Salah satu tip : Choose the good quality chocolate. I prefer Van Houten/Hershey's/Vochelle (msia brand)
Thank you for Martha Stewart (Living magazine Feb 04) for this recipe. Sorry I modified a bit of yours...now it is become "One of the BEST brownies!!"

For Batter
8 tbs unsalted butter, cut into small pieces--mentega tawar
2 ounces unsweetened chocolate (coarsely chopped)
4 ounces semisweet chocolate (coarsely chopped)
2/3 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
3/4 cup granulated sugar
3 large eggs
2 tsp pure vanilla extract

For Filling:
2 tbs granulated sugar
2/3 cup sweetened condensed milk--susu kental manis
1-1/4 cups unsweetend shredded coconut--kelapa parut halus (kering)
1 large egg
1/2 tsp pure vanilla extract

1. Preheat oven to 325 F/ 180C. Line ta buttered 9 inch square baking pan w/ foil or parchment paper, allowing 2 inches fo hang over sides.
2. Make filling: Stir together sugar, condensed milk, coconut, eggs & vanilla in a medium bowl, set a side.
3. Make batter: Put butter and chocolates in a heatproof medium bowl, set over a pan of simmering water; stir until melted. Let cool slightly.
4. Whisk together flour, baking powder & salt in a separate bowl & set a side.
5. Whisk granulated sugar into chocolate mixture. Add eggs and whisk until mixture is smooth. Stir in vanilla. Add flour mixture, stir until well incorporated.
----------easy ?!------------
6. Pour 1/3 of batter into prepared pan, & spread evenly w/ a rubber spatula. Place dollops of filling (about 1 tbp each) about 1 inch apart on top of butter. Drizzle remaining batter on top & gently spread to fill pan. Place dollops of remaining filling on top.
7. With a butter knife, gently swill filling into batter, running knife lengthwise and crosswise through layers. Bake until a cake tester inserted into brownies (ovoid center and edge) come our w/ a few crumbs but is not wet, about 45 minutes.
Let cool slightly in pan, about 15 minutes. Lift our brownies; let cool completely on a wire rack before cutting into squares.

Bahasa Indonesia
1. Panaskan over 325 F/180C. Alasi loyang persegi 9 inch dengan foil atau parchment paper, sisakan 2 inches pada bagian sisinya untuk memudahkan diangkat pada bagian sisinya.
2. Filling : aduk rata semua bahan; gula, susu, kelapa, telur dan vanilla dalam mangkuk sedang. Sisihkan.
3. Adonan : taruh butter dan chcolates dlm panci kecil tahan panas, letakkan panci pada air mendidih, aduk hingga meleleh. Biarkan dingin.
4. Campur terigu, baking powder & garam dalam mangkok terpisah.
5. Aduk gula dan campuran chocolate. Tambahkan telur dan aduk hinggal adonan lembut. Campurkan vanilla. Tambahkan campuran terigu, aduk hingga tercampur dgn baik.
-----------gampang kan?!-------
6. Tuang 1/3 adonan dlm loyang yg telah disiapkan dan ratakan dengan spatula. Drop filling (kira2 1 sdm perdrop) beri jarak kira2 1 inch, pada permukaan adonan. Tuang sisa adonan dan ratakan perlahan2. Drop kembali sisa filling di atas permukaan.
7. Dgn menggunakan 'butter knife' perlahan swirl filling into adonan (sorry susah terjemahannya, ngerti kan!), ... (pisaunya digerakin bolak-balik u/ membentuk motif gitu lho).
Bakar di oven hingga tusuk gigi yg dimasukkan ke pada brownies keluar dgn sedikit crumbs tapi tidak basah. Sekitar 45 menit. Diamkan dlm loyang selama 15 menit. Keluarkan brownies dari loyang dan diamkan hingga benar2 dingin di atas wire rack sebelum dipotong.
**Kalo rada repot cari jenis chocolate yg beda2...mmm pake standard cooking chocolate juga gak masalah kog. Trus kalo gak ada unsalted butter, ya pake salted juga gak apa2... garemnya kurangi aja jadi 1/4 sdt.

Bakwan Jagung.

80 gr tepung beras
2 sdm tepung terigu
1/2 sdt garam
1/2 sdt merica
1 kaldu blok kecil
125 ml air
100 gr udang kupas, potong 1 cm
6 butir bawang merah, iris halus
3 siung bawang putih, cincang halus
325 gr jagung manis segar pipilan (2-3 jagung)
minyak u/ menggoreng.

- Campurkan tepung beras, terigu, garam, merica & kaldu blok, aduk hingga rata. Tuangi air, aduk kembali hingga rata.
- Masukkan udang, bawang merah , bawang putih...aduk rata.
- Masukkan jagung pipilan, aduk hingga seluruhnya rata.
- Panaskan minyak, masukkan 2 sdm penuh adonan jagung, masak hingga kuning keemasan. Angkat, tiriskan.
- Sajikan selagi panas.

Bakmoi

300 ml minyak goreng
250 gr tahu kuning, kalo gak ada pake tahu putih juga okey. Potong dadu 1 cm.
2 siung bawang putih, cincang halus.
150 g udang kupas, cincang kasar
150 daging ayam, rebus, potong dadu 1 cm.
100 ml kaldu ayam
1 sdm kecap asin
2 sdm kecap manis
1/2 sdt garam
1/2 sdt merica bubuk
2 sdm bawang merah goreng (u/ taburan)

1. Panaskan minyak, goreng tahun hingga setengah kering. Angkat & tiriskan. Sisihkan.
2. Panaskan 2 sdm minyak, tumis bawang putih hingga harum.
3. Tambahkan udang dan daging ayam ... aduk2 hingga udang berubah warna.
4. Masukkan tahu goreng dan kaldu. Aduk rata.
5. Tambahkan kecap asing, kecap manis, garam & merica.
6. Masak hingga seluruhnya matang dan kuah habis. Angkat.
--Taburi dgn bawang goreng.

Bangkok Salad

3 hard boiled eggs
- red tomatoes
-pineapple
-cucumber
-lettuce
You can put onion & red bellpepper if you like.
-potato chips

Sauce:
100 gr crunchy peanut butter
150 ml boiling water
1/2 tsp white pepper
2 tsp vinegar
2 tsp sugar
1 tsp salt.

Wash all the vegetable-fruit, cut them as you like.
Using a small sharp knife, halve the eggs. Scoop yolks into a medium-size bowl, then press yolks with the back of spoon.
Mix with peanut butter and boiling water (little by little)... until mix well.
Add remaining sauce ingredient & mix well. Let them cold for a while. (I always put on refrig)
Cut the white eggs about 1/2 cm.

Mix all vegie, fruit, white eggs & potato chips and mix with the sauce just before you serve it.

*If you prepare the salad couple hours before you serve, just mix all vegie, fruit, white eggs without potato chips & sauce. Then you can mix it just before you serve.

Sus isi Vla

*Percaya deh ini Sus gampang bikinnya, dan uuueenak bgt lho. Kita lumayan sering bikin, u/ cemilan kalo lagi ngundang temen2 ke rumah, u/ dibawa ke acara2 tertentu, juga u/ dimakan sendiri di rumah. Dijamin...gak pernah besisa! Moga2 kalo kapan2 bikin lagi, gak kelupaan di foto. So far gue gak punya fotonya. Oh iya gue juga sering bikinnya 2x resep, tinggal di kaliin 2 aja resepnya...
*Resep ini gue dpt dari femina, dgn sedikit modifikasi. Dah perfect deh!

Bahan:
Kulit Sus.
200 ml air
125 gr margarine
1 sdm gula pasir
150 gr terigu
4 telur ayam

Isi (vla):
2 kuning telur
50 gr tepung maizena
500 ml susu cair
75 gr gula pasir
1 sdm rum

Kulit Sus;
1. Didihkan air, masukkan margarine dan gula pasir. Masak diatas api kecil hingga margarine meleleh. Masukkan tepung terigu sambil diaduk2 hingga adonan matang dan kalis (kental). Angkat dan biarkan uapnya hilang.
2. Masukkan tiap 2 butir telur ke dalam adonan kulit sus. Aduk cepat dan ratakan hingga jadi adonan yg lembut.
3. Masukkan adonan kulit sus ke dlm kanton yg dihubungkan dgn spuit bentuk bintang, semprot adonan di atas loyang datar bersemir margarine dan ditabur terigu dgn cara melingkar.
>>kalo saya mah biasanya pake bantuan 2 sendok makan krn gak punya spuit.
4. Panggang di oven panas bersuhu 180C, selama 30 menit. Sisihkan.

Isi Sus (Vla);
1. Aduk rata kuning telur, tepung maizena dan 50 ml susu. Sisihkan.
2. Didihkan sisa susu (450 ml) dan gula pasih sambil aduk2 di atas api kecil hingga gula larut.
3. Tuang larutan telur-maizena sambil aduk cepat dan rata hingga jadi adonan kental dan mengkilap. Tambah rum, aduk rata.

Penyelesaian;
Belah tipa kue sus membujur dgn pisau tajam, tidak sampai putus.
Beri 1 sdm adonan isi.

TIPs;
-Kalo nambahin telur ke dlm adonan kulit, usahakan uapnya adonan udah hilang supaya telur tidak pecah/berserabut.
-Besar Sus tergantung selera, biasanya diameter 4 cm...ntar mengembang jadi gede lho.
-Beri jarak antara adonan kulit yg sudah dicetak, spt bisa ngembang sempurna wkt dipanggang.
-Untuk variasi adonan vla, adonan vla bisa diberi coklat bubuk. Aduk coklat bubuk bersama tepung maizena.
