Our Xmas Open House 'Simple' Menu...

Dear Uncle & Aunty,
Patricia & Patrick would like to invite you to visit our Xmast open house on this coming Sunday (25/12). The address is Balikpapan Baru -del-; from Ring Road to Bundaran Monyet turn right, another roundabout turn -del-, take the first -del- turn & our house is in the -del- corner (with a -del- in the front). Our mother will cook the famous Soto Bandung which is yummy (thought a bit spicy for us).

Mini Cheese Pie

Ini salah satu isi toples natalan di rumah kita...Gue termasuk sangat jarang bikin pie. Ngebayanginnya, bakal repot bikinnya. Bbrp hari lalu wkt nyoba bikin pie ini, hmm emang agak makan wkt (mungkin krn bikinnya kecil2-bukan 1 pan gede), tapi gak serumit yg gue bayangin... abis ini mo ngumpul2 resep pie lagi aah, mo nyoba2 lagi. Aslinya resep ini pake cetakan pie kecil2 bentuk bunga, tapi krn gue gak punya jadi pake cetakan mini muffin aja. Resepnya dapet dari majalah Femina. Hasilnya... renyaaah dan yummy!!

Kulit pie:
150 gr mentega
250 gr terigu, ayak.
1/4 sdt garam
1 kuning telur
Isi:
75 gr gula pasir
3 butir telur ayam
1/4 sdt baking powder
1/4 sdt baking soda
1/2 sdt vanila bubuk
100 gr terigu, ayak
75 gr mentega, lelehkan
+ keju cheddar parut, secukupnya.

1. Kulit: Campur mentega, terigu dan garam. Aduk hingga adonan berbutir2 spt pasir. Masukkan telur, aduk kembali hingga rata..
2. Masukkan adonan ke dalam cetakan pie diameter 2-1/2 cm yg sudah diolesi margarine, tekan2 adonan. (gue pake cetakan mini muffin dia 3 cm).
3. Isi: Kocok gula pasir & telur hingga agak mengembang. Tambahkan baking powder, baking soda dan vanila. Kocok kembali hingga mengembang. Masukkan terigu, aduk rata. Tambahkan mentega, aduk kembali hingga rata. Sisihkan.
4. Ambil 1 sdt adonan isi, masukkan ke dalam masing2 kulit pie hingga agak penuh. Taburi keju parut. Lakukan hingga adonan habis.
5. Panggang dalam oven panas bersuhu 145 C hingga adonan isi mengeras dan matang. Angkat, keluarkan dari cetakan. Simpan dalam toples hingga saat disajikan
**Sebenarnya gak ada info berapa lama dipanggang,...kalo gue pake si otang, manggangnya 1 jam.

Chewy Chocolate Gingerbread Cookies

7 ounces best-quality semisweet chocolate
1 1/2 cups plus 1 tablespoon all-purpose flour
1 1/4 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 tablespoon cocoa powder
8 tablespoons (1 stick) unsalted butter
1 tablespoon freshly grated ginger
1/2 cup dark-brown sugar, packed
1/2 cup unsulfured molasses
1 teaspoon baking soda
1/4 cup granulated sugar

1. Line two baking sheets with parchment. Chop chocolate into 1/4-inch chunks; set aside. In a medium bowl, sift together flour, ground ginger, cinnamon, cloves, nutmeg, and cocoa.
2. In the bowl of an electric mixer, fitted with the paddle attachment, beat butter and grated ginger until whitened, about 4 minutes. Add brown sugar; beat until combined. Add molasses; beat until combined.
3. In a small bowl, dissolve baking soda in 1 1/2 teaspoons boiling water. Beat half of flour mixture into butter mixture. Beat in baking-soda mixture, then remaining half of flour mixture. Mix in chocolate; turn out onto a piece of plastic wrap. Pat dough out to about 1 inch thick; seal with wrap; refrigerate until firm, 2 hours or more.
4. Heat oven to 325°. Roll dough into 1 1/2- inch balls; place 2 inches apart on baking sheets. Refrigerate 20 minutes. Roll in granulated sugar. Bake until the surfaces crack slightly, 10 to 12 minutes. Let cool 5 minutes; transfer to a wire rack to cool completely.

Traditional Gingerbread Cake.

Spices are like magical powders. As soon as we smell ginger or cinnamon wafting out of the kitchen, we’re transported back to when we helped Mom cook.

Buat yg ogah berlama2 bikin gingerbread cookies, cobain deh resep ini... bisa juga dinamain 'spices cake' krn pake berbagai jenis rempah2. Wangiii seantero rumah, rasanya yummy bgt.

1 cup unsalted butter, room temperature + more for pan
1-1/3 cups all purpose flour
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon - kayu manis bubuk
3/4 tsp ground ginger - jahe bubuk
3/4 tsp ground nutmeg - pala bubuk
1/4 tsp ground cloves - cengkeh bubuk
1/2 cup brown sugar
1/2 cup granulated sugar
4 large eggs
1 tsp vanilla extract
Powder sugar for dusting.

1. Preheat oven to 350 F/180 C. Butter a 9 by 5 by 3 inch loaf pan, set aside. Into a large bowl, sift together flour, salt, baking soda, baking powder, cinnamon, ginger, nutmeg and cloves. Set aside.
2. In the bowl of an electric mexer fitted w/ the paddle attachment, cream butter and both sugars on medium speed until light & fluffy, 2-3 minutes. Add eggs, one at a time, mixing well after each addition. Beat in vanilla. With mixer on low speed, gradually add flour mixture to butter mixture until just incorporated.
3. Pour batter into prepared pan and smooth the top with an offset spatula. Bake until a cake tester inserted in the center come out clean., 50-55 minutes.
Transfer to a wire rack to cool completely. Dust generously with powder sugar.

GINGERBREAD Teddy.

Satu lagi hasil si otang pagi ini... Gingerbread Teddy. Kog Teddy? bukan gingerbread men? Bukan...krn bentuknya teddy bear. Kog gak dihias?...begini, ceritanya di sekolah Patricia term ini mereka belajar byk ttg animals dan besok malem di sekolahnya ngadain acara Safari Night, sekalian cari dana u/ pelestarian satwa di Kalimantan. (uuups rasanya gak percaya kita tinggal di Kalimantan neeh hua..ha..ha..) Nah, besok siang...mereka akan menghias cookies dengan berbagai macam bentuk binatang, mungkin bakal dijual juga di acara malemnya. Yang bikin cookiesnya siapa? bbrp ortu sukarela bikinin cookies, termasuk gw. Krn dah lama gak bikin gingerbread cookies, ya kesempatan ini sekalian dipake pemanasan, sebelum bikin gingerbread men u/ natalan ntar. Ternyata, stelah dimodifikasi dgn bahan2 ala Indonesia... teng neeeng... inilah resep andalah kami.

125 gr unsalted butter
1/3 cup palm sugar
1/4 cup honey (pengganti golden syrup)
1 egg, lightly beaten
2 cups flour
1/4 cup self-raising flour
1 tbsp ground ginger
1 tsp baking soda

1 Panaskan oven 180 C. Alasin 2-3 loyang datar (oven trays) dgn kertas roti yg diolesin mentega.
2. Dgn menggunakan mixer, campur butter, gula dan syrup/honey dlm mangkok kecil hingga 'light' & 'creamy'. Tambahkan telur perlahan, dan campur dgn baik setiap kali penambahan. Pindahkan campuran ke dalam mangkuk besar. Ayak bahan2 kering (flour, ginger, baking soda) ke dalam campuran tadi. Campur dgn menggunakan spatula/sendok kayu hingga tercampur. Campur (dibolak-balik) adonan menggunakan tangan yg dibaluri terigu. Pindahkan adonan ke atas permukaan datar yg dibaluri terigu dan 'knead' (campur dgn ditekan bolak-balik) selama 1-2 menit hingga lembut.
3. Bagi adonan 2 bagian. Ratakan masing2 adonan diatas kertas roti setebal 5 mm. (Jika perlu, baluri rolling pin dgn terigu u/ menghindari adonan lengket). Pindahkan adonan ke atas talenan (cutting board) dan masukkan ke dalam kulkas selama 10-15 menit- agar adonan sedikit mengeras u/ memudahkan di cetak/potong.
4. Cetak adonan yg telah didinginkan tadi dgn cetakan orang2an. Kumpulkan sisa adonan yg tidak tercetak dan ratakan, cetak lagi... Letakkan adonan yg telah dicetak di atas loyang yg telah disiapkan. Beri hiasan (mata/hidung/mulut/kancing sesuai selera), dan panggang selama 10-15 menit atau hingga kecoklatan. Dinginkan cookies diatas loyang.

**Jurus sukses membuat cookies, bisa diliat di sini (source NCC)
Icing : Kocok 1 putih telur dlm mangkok kecil menggunakan mixer hingga berbentuk busa/foamy. Tambahkan 1/2 sdt lemon juice dan 1-1/4 cups gula bubuk (yg telah diayak) sedikit2. Bagi ke dlm bbrp mangkok kecil. Teteskan pewarna makanan yg berbeda ke dlm masing2 mangkok, campurkan. Masukkan masing2 campuran berwarna ke dlm 'paper icing bags' yg ujungnya tertutup. Gunting sedikit ujungnya, dan hiaslah gingerbread cookies sesuai selera

Apple Yoghurt Cake

Apple ama cinnamon...mmm perfect combination! Kalo belom tau rasanya, cobain resep ini. Resep ini gw dpt dari Femina (kira2 4-5 th yll), yg wkt itu khusus resep2 'Cake ala cafe'. Yg pasti cake ini juga jadi resep favorit bbrp temen gue yg pernah gue tularin kenikmatannya...
Almond-nya kali ini gue ganti mete (krn cuma ada itu di dapur). Margarine--gue ganti kombinasi 100gr margarine & 100gr butter. enjoy!

200 gr margarine
150 gr caster sugar
3 eggs
250 gr flour
¾ tsp baking soda
½ tsp baking powder
200 ml plain/natural yoghurt
3 green apples (±350 g)
Peel, core & thickly slice the apple
Put into salt water.
50 gr toasted slivered almonds
Mix together;
75 gr palm sugar or brown sugar
25 gr caster sugar
1 tsp ground cinnamon

1. Line loaf pan 11x30x7cm with baking parchment.
Lightly grease it & flour the base.
2. Cream together margarine & sugar in bowl until light & fluffy.
Gradually add the eggs, beating well after each addition.
3. Fold flour, baking soda, baking powder into the mixture until well combined.
Fold yoghurt, mixing well.
4. Pour a half mixture into the prepared pan,
arrange a half of sliced apples over the mixture
& sprinkle with a half of sugars mixture. Repeat with the next layer.
5. Bake in a preheated oven at 180C for 1 hour or
until a toothpick inserted in the middle of the pan comes out clean.

INFO: Measuring CUPs & Spoons.

Ini sekedar info ajah, mungkin ada yg mampir di 'dapur' kita ini dah gak familiar dgn ukuran 'cup' yg byk dipakai di sini. Emang resep2 di Indonesia termasuk jarang pake ukuran ini, biasanya pake gram2an. Sebagian besar resep2 'barat' pake ukuran cup2an ini.
Buat gue pribadi, gue prefer pake cup2an ini, lebih praktis, cepat juga lebih presisi. Pastikan aja u/ selalu meratakan bahan yg diukur pake cup2an ini. (jadi bentuknya gak menggunung).
Bentuk Measuring CUPs ini kira2 seperti ini...

ada yg terbuat dari PLASTIK, ada juga yg terbuat dari STAINLESS STEEL
Ada yg terdiri dari 4 ukuran cup yg berbeda ada juga yg terdiri dari 6 cup.
Biasanya terdiri dari 1/4-1/3-1/2 dan 1 cup, lengkapnya sih ada 2/3 dan 3/4 cup juga,
tapi toh bisa dipake ukuran 2 x 1/3 cup u/ ngedapetin 2/3 cup... dst.
Temennya measuring cups ini adalah Measuring SPOONs. Bentuknya spt ini...

Keterangannya kira2 sama lah ama measuring cups... bbrp sendok dgn berbagai ukuran baik tsp (teaspoon) maupun tbs (tablespoon). Bahannya ada yg plastik juga stainless steel.
Ngukurnya juga kudu diratain, jadi misalnya kita nyendok 1 tbs gula, ratain atasanya entah pake jari tau pisau meja baru dituang ke bowl tempat nyampur adonan.
Kedua alat ini bisa dipake baik ngukur bahan2 KERING (terigu, gula, oatmeal, coklat bubuk, coklat chips, kismis dll) juga bahan2 BASAH (susu, butter, cream, dll).
Naah untuk measuring cups, ada juga yg modelnya gelas ukur. Pilih yg ada ukuran cup-nya...

Di mana belinya?
Kalo di Indonesia gw pernah liat dia Hero PIM. Tapi yg sekarang kita pake beli di Ace Hardware Balikpapan. Di sana ada yg plastik juga stainless steel. Kemungkinan sih di toko2 bahan kue juga jual. (kami tinggal di Balikpapan jadi gak bisa ngasi info yg lebih lengkap).

Cashew-Caramel COOKIES

Salah satu tradisi di acara Holiday Celebation di sekolah Patricia (yg diadain td malam) adalah bawa cookies favorite keluarga u/ di share. Buat gue ini kesempatan nyoba resep baru, akhirnya terpilihlah resep ini u/ dicoba. Gw comot resepnya Martha Stewart. Ternyata UEeeenak, gak susah, cuma mmm bikin cookies itu lebih lama drpd bikin cake yah! oaaahhh... Resep ini cucok u/ yg suka kacang2an, kurang cucok u/ yg punya masalah asam urat ;)

1-2/3 cups all-purpose flour
1/2 teaspoon salt
2-1/2 cups roasted, salted cashews
2 tablespoons plus 1 teaspoon canola oil
1 stick (8 tablespoons) unsalted butter, softened (~125 gr)
3/4 cup packed light-brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
24 cubes soft caramel candy (7 ounces)
1/4 cup heavy cream

1. Preheat oven to 350°. Sift flour and salt together. Coarsely chop 1 cup cashews; set aside. Process remaining 1 1/2 cups cashews in a food processor until finely chopped. Pour in oil. Process until mixture is creamy, about 2 minutes.
2. Put cashew mixture, butter, and sugars in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until fluffy, about 2 minutes. Mix in egg and vanilla. Reduce speed to low; gradually add flour mixture. Mix in reserved chopped cashews.
3. Shape dough into 1 1/2-inch balls; space 2 inches apart on 2 parchment-lined baking sheets. Bake 6 minutes; gently flatten with a spatula. Bake until bottoms are just golden, 6 to 7 minutes more. Let cool completely on sheets on wire racks.
4. Melt caramels with cream in a small saucepan over low heat, stirring. Let cool. Using a spoon, drizzle caramel over cookies; let set. Store airtight in single layers.

Tips: u/ tahap ke 3, jangan terlalu lama ngebake-nya sebelum ditekan pake spatula, kalo keburu kering adonannya jadi agak pecah2... ikutin instruksi, cukup 6 menit trus keluarin dari oven dan tekan si bola tsb, trus masukin oven lagi.

Healthy Chocolate MUFFIN

Ini resep muffin hasil modifikasi... resep aslinya adalah resep Snickerdoodle Mini Muffin yang gw ambil dari webnya Quaker Oatmeal... Muffin 'sehat' tsb sangat digemari keluarga kami. Nah resep ini anggap aja versi muffin coklatnya. Gak kalah sehat deh, cuma pake 1 telur, 1/2 cup sugar dan 4 sdm butter u/ 10 muffin gede gini. Sehat bukan?

Yang dimodifikasi cuma:
1/2 cup sugar ---> 1/4 cup sugar + 1/4 cup palm sugar
1 cup oatmeal ---> 1 cup corn flakes
di campuran dry ingredients ditambahin 3 tbsp cocoa powder
Dan sebelum dimasukin oven ditaburin kismis dan chocolate chips sesukanya,
gak perlu ditaburin campuran sugar & cinnamon lagi.
