Banana Oatmeal Bread

A quick delicious easy bread... for this quick update :)

It was one beautiful day, I just arrived home, put my grocery shopping bags on kitchen table, when I spotted some ripen bananas on the table. Oooho, that time I immediately knew what to do to save my bananas because I bookmarked the recipe of Banana Oatmeal Muffin in my 'smart' phone.

I have tried some banana bread and muffin recipes, I always be happy with the result, until I was thinking to have banana bread that is combined with oatmeal to make me feel better for baking something 'healthier'. I found this recipe and bookmarked it on my phone that normally I used to open the recipe in kitchen.

And this recipe is really good... it has delicious flavor, moist and rustic texture.
I used 2 smaller size loaf pans, and put two different toppings on top of them. One with grated cheddar cheese and chocolate chips, another one I used almond and raisin.

The banana bread just got out from the oven when our children arrived home from school. The happy kids were enjoying the bread with their afternoon milk. As always, they prefer the bread with cheese and chocolate chips topping.

That's all for now. I have to go back to my 'new' routine for the next couple of days; helping my daughter preparing the National Exam on the second week of May (it's 12 days to go). Honestly, it's not an easy job  :(

"Oatmeal adds a rustic quality to this moist banana loaf."
INGREDIENTS:
1/2 cup shortening (I used unsalted butter)
1 cup white sugar
2 eggs, beaten
1/2 teaspoon vanilla extract
1 cup all-purpose flour (I used 1/2 cup all-purpose flour + 1/2 cup wholewheat flour)
1 cup quick cooking oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/2 cups mashed bananas
1/4 cup milk
1/2 cup chopped raisins (optional)

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan and set aside.
2. Cream together the shortening and sugar. Add eggs and vanilla, beat until fluffy.
3. Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
4. Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes. Banana Oatmeal Bread

mba mau tanya, 1/4 cup susu itu maksudnya susu kental manis gtu atau susu cair kyk digambarnya ?? aku suka bingung uy, maklum amatir hihii..thanks mba, selalu tergoda u/ nyoba resep2 di blogmu ini, love it

Susu yg dimaksud, susu cair (saya pakai susu uht). Biasanya kalo susu kental manis akan tertulis 'condensed milk'.
